Description
This easy homemade version of Costco stuffed peppers is rich, cheesy, and full of comforting flavor. A perfect weeknight dinner you can bake, freeze, or reheat with ease.
Ingredients
1 tablespoon olive oil
1/2 onion, diced
1 pound ground beef or ground turkey
24-ounce jar of marinara or spaghetti sauce
3 large or 6 small bell peppers (any color)
1/2 cup uncooked white or Basmati rice
1/2 cup water or beef broth
1/4 teaspoon salt
Salt and black pepper, to taste
1 1/3 cups shredded Parmesan cheese (divided)
Fresh parsley, optional
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. Cut peppers: either halve 3 or clean out 6 whole. Dice the pepper tops (excluding stems).
3. Sauté diced onion and pepper tops in olive oil over medium heat until softened.
4. Add ground meat and cook until browned, breaking it up as it cooks.
5. Stir in 14 oz of sauce, uncooked rice, broth, and 1/4 tsp salt. Cover and simmer 15–18 mins.
6. Add 1 cup Parmesan. Taste and season with salt and pepper as needed.
7. Fill peppers with mixture and place upright in dish. Add remaining sauce if desired.
8. Cover with foil and bake for 40 minutes. Uncover and top with remaining cheese.
9. Bake uncovered for 5 more minutes or until cheese melts and bubbles.
10. Garnish with parsley and let rest before serving.
Notes
You can freeze cooked peppers individually for up to 2 months.
To reheat from frozen, bake at 375°F for 45–50 minutes.
